My father was a gringo born and raised in Peru, and he always claimed to be Peruvian. He returned to the US for college, met my mother, had two kids in less than two years (yes – CatholicsJ), then returned to Lima with his college degree, bride, and kids in tow (3 by the time they made the long journey to Peru via Nicaragua, Panama, Colombia and Ecuador). I had the absolute pleasure of spending my next 13 years in Lima. I, like my father before me, ‘Soy Peruana!” and am absolutely in love with Peruvian food. I always seek out these restaurants when traveling. This is my second attempt in Bogota (the first being Mi Peru which was terrible – don’t go unless you are a fan of salty mediocre food), and this may well be my last because it is unbelievably fabulous.
As I child, I would walk to Lima Golf to meet my folks for lunch and would always, without fail, order one or two dozen Conchitas a la Parmasana for my meal. When I saw this on the menu at Estampa del Chalan, I had trouble holding back tears of joy. When they arrived, I time-warped to my youth and devoured them with the help of my soup loving amigo in about 10 seconds flat. Oh so simple – scallops, butter, lime juice and parmesan – but oh so scrumptious.
It would be entirely possible to make a meal of the appetizer selection at Estampa del Chalan. There are five Ceviches to choose from depending on what combination of seafood you are in the mood for (just like in the Cevicherias of my youth), or choose the fancier option of Tiraditos de Corvina. Of course - if you make a party of it by inviting some friends – you will be able to branch away from the seafood appetizers to share one, or all three, of the potato appetizers: Papas a la Huancaina with their spicy cheese sauce, Papas Ocopa with shrimp in a peanut sauce, and Causa Rellena with chicken and avocado. Meat lovers, be sure to include at least one order of the Anticuchos for your feast.
Next - skip the Plato Fuertes section and head straight for the Platos Especiales which include a few rare ancient Peruvian dishes. The portions are huge but the food is oh so good; please order at least one of the specials to share. Any of the three dishes prepared in the old tradition using stone and clay pots are sure to tantalize you and keep you coming back for more: Carapulca con Cerdo is one of the most ancient dishes of Peru, Huatia Sulcana with beef and rosemary, or go for broke with the Pachamanca which combines beef, lamb and pork…mmm pork.
